I want to drive a brushless DC motor for a project other than RC
I did it before with a speed controller and a servo driver.
but the brake settings etc were annoying I want something
simple like turn the pot on the servo driver and the motor starts
turn it ccw and the motor stops.
Any ideas

Use the appropriate aircraft or helicopter motor control without the
braking feature.  A potentiometer controlled pulse generator can be made
to generate the drive pulses for the motor control.
The basic pulse generator circuit is simple, and can be made with logic
gates or one of the successors to the 555 timer module.
Mouser electronics distributor is your friend.
