Brushless motor cuts out after a few seconds

I'm in the process of making an RC hovercraft, and have decided to use
brushless motors just for the thrill of it!
I am using the "Mystery RC 5000 Outrunner Brushless Motor & 30A ESC

This is being controlled with the spektrum DX3.0 3 channel transmitter/
receiver.

Now, the problems i am having are:
1 - using the 3rd channel of the transmitter i am powering the 'lift'
motor, so it's either on/off. However, the motor only runs for a few
seconds then dies down. I am unsure of why it does this.
2 - for the drive fan i want to use the 'trigger' on the controller to
have proportional control over the fan speed (hence the speed
controller) - however this is not the case, and the motor doesn't seem
to respond to the trhottle trigger at all.

I am pretty new to brushless (coming from the nitro side of things) -
and am sure it is due to my controller set up, but i am not sure how
or what to do!
Servos are easy because you can physically change positions etc, but
the ESC seems to be baffling me!

Any help would be appreciated in basic ESC knowledge, and more
specifically for the problems i'm having!

Low battery cutoff in the ESC?

Try controlling a servo first, to make sure the controls do what you
think they do.

It's also possible that you need to arm that ESC properly, and you're
not doing it.  Arming procedures vary from ESC to ESC, but usually
they start at zero throttle and sometimes you have to go to full
throttle and back to zero throttle before it'll work.

It could also be an even more picky low voltage cutoff.
