Started up my heli today.  Engine ran normal for few seconds, then increased
rpm suddenly for 1 sec, then dropped down for 1 sec, then went up again for
about 1/2 sec, then the engine quit suddenly.  Is it too lean or too rich?

sounds more like a bad plug or a split fuel line somewhere. Check the clunk
tube as well, sometimes they go jelly-like and start to shed bits of silicon
(straight into the carb).
Could even be the fuel, if it is old, or not shaken before fueling up.

Do you shake your fuel before fueling? Who are you, James Bond? :-)
