Generally just one control.
Sails are set to give let the boat sail hands off with neutral rudder
when close hauled and let out for other points of sail.
Some boats need separate controls, I have a cat schooner (two masts,
each with a large simple triangular sail, that requires separate
controls to tack properly as the foresail has to be eased before the
boat will come onto the new tack, but any conventional bermudan sail
will be quite happy with a single control.
If it is a very large boat make sure the total sail area is within the
winch capacity. Usually winches are OK up to Marblehead size 800
sq.in.

Thanks Henry - perfectly summarized.
My 2cents - some people like to be perfectionist and have the sails
controlled individually but that is mostly just a pain.
